A joey will stop eating when it's full so you don't have to worry about overfeeding. However, if the belly starts to appear bloated - then an immediate trip to the vet is necessary... but it doesn't sound like that's what's happening in your case, so no worries there I'm glad to hear the joey is no longer dehydrated.
