Sorry about missing June, things got busy here at the rescue.

Crockpot Applesauce

3 pounds of apples (peeled, cored and sliced)
1/2 cup of brown sugar
1 teaspoon of Cinnamon
1 1/2 Tablespoon of lemon juice

Directions

1. Place apples, brown sugar, and lemon juice into a slow cooker.
2. Cook on "high" for 3 to 4 hours.
3. Remove from slow cooker and place into a food processor and blend to your desired constancy.
4. Stir in cinnamon.

I make apple sauce a lot and have found the not all apples are created equal when cooking.
Here my list of tasty apple combinations I have tried to make great applesauce for skin and fur kids:

Johnathan and McIntosh

Fuji and Gala

It's a combination of a slightly tart with a slightly sweet tart. Cinnamon isn't needed for these combinations.

Apples that don't cook well are:

Delicious
Ambrosia
Honeycrisp

These are sweet to eat right out of the basket, but loose their flavor and some texture when cooked.

Fresh and in season apples make the best applesauce.
